Blueberry vanilla breakfast quinoa

Some people don’t like breakfast because they don’t wake up hungry, or they don’t have time to make it, or they just prefer lunch/dinner foods.  I am not that person. I love coffee, orange juice, tofu scrambles, peanut butter toast, fruit salad, muffins! Maybe I just love food, now that I’m thinking about it… but I really think a good breakfast can set the tone for the rest of the day.

I recently made a blueberry vanilla quinoa for breakfast! This super easy, ready? 1/4 cup of quinoa + 3/4 cup almond/soy/flax milk + 1 tsp vanilla.  Bring to a boil, then reduce to a simmer and cook for 15-20 minutes.  Check on it at some point to add more milk, then add the blueberries (or any berry your berry possibilities are endless!!!!!) at the end.  If you like yours a little sweeter, add your favorite sweetener (mine being maple syrup or coconut sugar).  If it’s time to switch up your oatmeal routine, try some quinoa porridge.  Hooray for quinoa!
