Everyday salad

I wasn’t really a salad person until about 6 months ago.  I thought of salads as a cold and a little boring. I have radically changed my opinion since then, as I have found that there are plenty of delicious things you can pile on a salad.  I like to have this salad for lunch or dinner almost every day, but I always change up what I put on it.  This one had cucumbers, red peppers, baby carrots, chopped roma tomatoes, avocado, green lentils and a big ol’ mound of homemade hummus.  For dressing I prefer really simple– just a tiny drizzle of olive oil, balsamic and a sprinkle of nutritional yeast.

I have to have at least one warm item on my salads, so if I don’t use lentils, I use quinoa, roasted sweet potato or spicy baked tofu. Sometimes I put edamame, celery, cauliflower, broccoli, beets or any other veggie on there.  It’s your chance to just go salad crazy!  I promise, even if you aren’t a salad person
