Avocado edamame salad

This is a super quick salad if you happen to have everything on-hand!  I was craving edamame and this was a light, perfect solution.

Just boil edamame for three minutes, and toss it with 1 diced avocado, and 1 cup of both corn and diced tomato.  I put just a teensy bit of olive oil in it, along with some lime juice, garlic powder and pink himalayan salt.  I think it would be good with a little bit of cumin too, so I’ll try that next time for sure.

This would be great as a side at a cook-out, but it’s equally great as a summery salad, or even by itself!
