It’s a beautiful Saturday. Today my neighbor at the condo let me take a spin on his pretty sweet Segway, Hannah and I went to the farmers’ market in Raleigh for the first time, and we baked this afternoon!
These poppyseed bites could be eaten as a little dessert if you’re craving something sweet and filling, but it’s also great if you need a pre/post workout snack because it has lots of good fat and protein.
You need: walnuts, sunflower seeds, shredded coconut, dates, vanilla, lemon juice/zest, poppy seeds and salt into a food processor, and then roll them up and voila you have sweet little lemon poppyseed bites. Hannah was especially excited about these because she really, really loves anything lemon poppyseed. They’d be good as an on-the-go snack too, we saved most of ours for later.
