I really love salads, but sometimes you gotta switch it up a little bit. This is a delicious, protein-packed, uh-mazing, wiiinning recipe.
Basically it’s a bed of quinoa and lentils topped with stir-fried veggies and avocado pesto. I used spinach and zucchini for my veggies, but you can load whatever you prefer on there! I got the recipe from Oh She Glows and I will definitely be revisiting the concept. Millet or brown rice could sub for the quinoa, and broccoli, peppers, cauliflower, mushrooms or other veggies could be added to the stir-fry! The avocado pesto is what makes all of this so amazing though. If you’re looking for a green, healthy, but hot and hearty lunch, this so SO for you!!
