I’ve been wanting to make some tater tots for a while and I stumbled upon a recipe for a sweet version at Minimalist Baker yesterday! I totally stole the idea but instead of using cinnamon and sugar, I used savory spices and vegan butter! This is a very tasty, addictive snack, so be warned!
To make this you will need:
– 2 medium sweet potatoes
– 1 tbsp vegan butter
– 1 tsp salt
-1/2 cup gluten-free panko bread crumbs (if you aren’t gluten free you can use regular bread crumbs!)
Preheat your oven to 375. You can bake your sweet potatoes if you like, but I just put mine in the microwave for 3 minutes on each side. Make sure to poke holes with a fork and to let cool for a few minutes when they are done.
After your potatoes are cooled, peel them and mash with the vegan butter and salt.
On a baking sheet with foil, place divvy the sweet potato mash into heaping teaspoons (sort of like cookie dough).
After all the tots are divided up, take each one and roll it in the panko breadcrumbs. It’ll be much easier to make them into a tot shape once they are breaded.
Bake them for 40 minutes, flipping the tots halfway through.
We enjoyed these with Sriracha, but they would be tasty in lots of dips. If you want a little more kick in your tots, add paprika, cayenne or coriander into the breadcrumb mixture. Or you could add hot sauce to the sweet potato mash which would also be so good!
