I lovelove overnight oats! Mainly because if I’m lazy in the morning I have breakfast basically ready to eat. We had some extra berries in the fridge from cocktails I made the other night, so I really wanted to put them to use them for breakfast. I thought lemon would complement them really well. To make this easy-peasy parfait, all you need is:
1/2 cup vanilla coconut yogurt
1/2 cup almond milk
1/2 cup gluten-free rolled oats
1 tbsp chia seeds
1 tbsp hemp seeds
1 tsp lemon zest
Combine all of the ingredients, cover and chill overnight. In the morning add the berries and sweetener if you prefer! Hannah thought that the oat mixture tasted sort of like lemon poppyseed because of the lemon flavor and chia seed texture! Yuuum!
