People immediately assume vegans are missing out on everything good in life.  No cheese? Only celery?  Total, constant misery? Definitely not.  These enchiladas prove that vegan food can be totally great and satisfying and indulgent and perfect.  I made these the other night when a few friends came over and they were omnivore approved (yay!!!).

These are pretty easy, especially prepared in advance! These guys are stuffed with sautéed bell pepper, sweet potato, black beans, onion and garlic and smothered with enchilada sauce and avocado lime cream.  They were amazingly hearty Tex-Mex deliciousness.
