Cheesy quinoa wraps

So Han made these at the beginning of the summer and insisted that it was amazing and I can’t believe I didn’t make these until now! The recipe is from our favorite cookbook (Oh She Glows) and is perfect for a quick, satisfying lunch.
This is yet another recipe that again proves that cashews are a magical nut for vegans everywhere. I know that sounds completely absurd but who even knew soaked cashews could be the base of creamy sauces, “queso” dips, cheese cakes and macaroni and cheeses! And this amazing broccoli quinoa cheesy sun dried tomato goodness is no exception!
